Garlic Parmesan Chicken Bites: A 30-Minute Dinner We Make Every Week

Golden garlic parmesan chicken bites cooked in a cast iron skillet with garlic butter, melted parmesan, and fresh parsley

Golden, garlicky, and coated in melted parmesan. This one hits every time.

There are two kinds of chicken recipes we cook at Perfect Cooking: the ones that photograph well, and the ones we actually eat on a Tuesday night. This one is both.

Garlic parmesan chicken bites have been all over Pinterest for a while now. Most of the versions we tried were fine but not memorable. Too dry, or too plain, or leaning on so much butter that the parmesan slid off the pan and never really made it onto the chicken.

After a few weeks of tweaking, this is the version that stuck. It takes about 30 minutes, uses one skillet, and turns out juicy bites with a proper garlic parmesan crust that clings to every piece.

We serve it over rice, in wraps, with pasta, or straight from the pan with toothpicks when friends come over. It works every time.

Why you’ll love this recipe

  • Quick. From cutting board to plate in about 30 minutes.
  • One pan. Everything happens in one skillet. Minimal cleanup.
  • Kid-friendly. No spice, no weird textures, just juicy chicken and cheese.
  • Flexible. Works over pasta, rice, salad, or on its own.

Ingredients you’ll need

  • 1.5 lbs (700g) boneless, skinless chicken breast or thighs, cut into bite-sized pieces (about 1-inch cubes)
  • 2 tablespoons olive oil
  • 3 tablespoons butter, divided
  • 6 cloves garlic, minced fine
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup (50g) grated parmesan cheese, freshly grated works best
  • 2 tablespoons fresh parsley, chopped (optional)

A quick note on the chicken: thighs give you more flavor and stay juicier if you’re prone to overcooking. Breast works fine if you keep an eye on the pan.

And a note on the parmesan: pre-shredded bagged parmesan is coated with anti-caking agents and won’t melt properly into the sauce. Grate it fresh from a block if you can. It’s the single change that makes the biggest difference in this recipe.

How to make garlic parmesan chicken bites

Step 1: Season the chicken

Pat the chicken pieces dry with paper towels. Dry chicken sears. Wet chicken steams. Toss the bites with salt, pepper, paprika, and Italian seasoning until every piece is coated.

Step 2: Sear the chicken

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. When the butter has melted and started to foam, add the chicken in a single layer. Don’t crowd the pan. If your skillet is smaller than 12 inches, do it in two batches.

Cook without moving the pieces for about 3 minutes, until the bottoms are golden. Flip and cook another 3 to 4 minutes, until the chicken is cooked through (165°F / 74°C internal).

Transfer to a plate.

Step 3: Build the garlic butter

Lower the heat to medium. Add the remaining 2 tablespoons of butter to the same pan. Once melted, add the minced garlic. Stir constantly for about 30 seconds. Garlic goes from golden to burnt in about 15 seconds after that, so don’t walk away.

Step 4: Bring it together

Return the chicken to the pan and toss to coat in the garlic butter. Sprinkle the parmesan over the top and stir gently for about a minute, until the cheese melts and clings to the bites. If the sauce looks too thick, splash in a tablespoon of water.

Finish with fresh parsley and a crack of black pepper.

Tips for the best results

Cut the chicken evenly. Same-sized pieces cook at the same rate. Rushing this step gives you some pieces overcooked and some still pink in the middle.

Don’t skip drying the chicken. Even 30 seconds with paper towels makes a noticeable difference in how the crust develops.

Use a wide skillet. A 12-inch pan gives the chicken room to sear. In a smaller pan it steams and turns gray instead of golden.

Add lemon at the end if you want brightness. A small squeeze cuts through the richness of the butter and cheese.

Variations to try

  • Add heat. A pinch of red pepper flakes with the garlic gives it a gentle kick.
  • Make it saucier. Add 1/4 cup of heavy cream after the garlic and let it reduce for a minute before adding the chicken back.
  • Add greens. Wilt a few handfuls of baby spinach into the pan right before the parmesan.
  • Turn it into pasta. Toss the finished chicken with cooked penne or rigatoni and a splash of pasta water.

How to store and reheat

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm gently in a skillet over medium-low heat with a splash of water or broth. The microwave works too but the chicken can dry out fast. Reheat in short 30-second bursts and stop as soon as it’s warm through.

We wouldn’t recommend freezing this one. The parmesan sauce separates on thaw and the texture never fully recovers.

What to serve with garlic parmesan chicken bites

  • Fluffy white rice
  • Buttered pasta or gnocchi
  • A simple green salad with lemon vinaigrette
  • Crusty bread to mop up the garlic butter
  • Roasted broccoli or asparagus

Frequently asked questions

Can I make this in the air fryer?

Yes. Season the chicken and toss with the olive oil, then air fry at 400°F (200°C) for 8 to 10 minutes, shaking halfway. Make the garlic butter separately in a small pan, then toss the cooked chicken with the butter and parmesan in a bowl.

Can I use frozen chicken?

Thaw it fully first. Cooking from frozen releases too much water and you’ll never get a proper sear.

What’s the best pan for this?

A cast iron or stainless steel skillet gives the best crust. Non-stick works but the sear won’t be as deep.

Can I double the recipe?

Yes, but sear the chicken in two or three batches. Overloading the pan is the fastest way to ruin the crust.
