Creamy Chicken Alfredo Pasta in 30 Minutes (No Jar Sauce Needed)

Creamy chicken Alfredo pasta with sliced seared chicken and parmesan in a skillet

This creamy chicken Alfredo pasta makes a comforting dinner without a jar of sauce. Tender chicken cutlets get a smoky, savoury seasoning, then the Alfredo sauce is made in the same skillet.

The browned bits left by the chicken add extra flavour to the butter, garlic, cream and Parmesan.

Because the chicken breasts are sliced into thinner cutlets, they cook quickly and stay tender. While they rest, boil the pasta and make the sauce. Dinner is ready in about 30 minutes.

Why This Chicken Alfredo Works

The chicken’s garlic, onion, smoked paprika and cayenne seasoning adds a little smoky heat to the mild, creamy sauce. Slicing each breast horizontally creates thinner pieces that sear quickly and evenly.

The sauce starts in the same skillet, so you can scrape the browned seasoning into the cream. Freshly grated Parmesan melts into a smooth sauce, while a small amount of nutmeg adds gentle warmth.

Ingredients

Serves: 2   Prep: 10 minutes   Cook: about 20 minutes   Total: about 30 minutes

For the chicken

  • 2 boneless, skinless chicken breasts (about 450 g / 1 lb total), sliced in half horizontally
  • 1 tsp garlic granules or garlic powder
  • 1 tsp onion granules or onion powder
  • 1½ tsp smoked paprika
  • ¼ tsp cayenne pepper, or more to taste
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive or vegetable oil

For the pasta and Alfredo sauce

  • 150 g / 5 oz tagliatelle or fettuccine
  • 2 tbsp butter
  • 4 garlic cloves, finely chopped
  • 300 ml / 1¼ cups heavy cream
  • ¼ tsp ground nutmeg
  • 40 g / ½ cup finely grated Parmesan, plus extra for serving
  • A handful of fresh flat-leaf parsley, chopped
  • Salt and black pepper, to taste

How to Make Creamy Chicken Alfredo Pasta

  1. Bring the pasta water to a boil. Fill a large pot with water, salt it well and bring it to a boil while you prepare the chicken.
  2. Season the chicken. Mix the garlic granules, onion granules, smoked paprika, cayenne, salt and pepper. Rub the seasoning over both sides of the chicken cutlets.
  3. Sear the chicken. Heat the oil in a large skillet over medium heat. Add the cutlets and cook for 4–5 minutes per side, until browned and cooked through. Check that the thickest part reaches 74°C / 165°F. Transfer the chicken to a board to rest, leaving the browned bits in the skillet.

  1. Cook the pasta. Add the tagliatelle to the boiling water and cook according to the packet, stopping about 1 minute early. Before draining, reserve a mug of pasta water.
  2. Start the Alfredo sauce. Lower the skillet heat to medium-low and add the butter. Once melted, add the garlic and stir for about 1 minute; don’t let it brown. Pour in the cream and scrape up the browned bits from the pan.
  3. Finish the sauce. Add the nutmeg, a pinch of salt and black pepper. Simmer gently for 2–3 minutes, then stir in the Parmesan and most of the parsley. Keep the heat low so the sauce stays smooth.
  4. Toss everything together. Add the drained pasta and 2–3 tablespoons of pasta water. Toss until the sauce coats the pasta. Add another splash of pasta water if the sauce seems too thick.
  5. Serve. Slice the rested chicken and arrange it over the pasta. Finish with the remaining parsley and extra Parmesan.

Tips for Smooth, Creamy Alfredo

  • Grate the Parmesan fresh. Finely grated cheese melts more smoothly than pre-shredded cheese.
  • Keep the heat gentle. A high temperature can make a cream and cheese sauce grainy or separated. Lower the heat before adding Parmesan.
  • Use pasta water to adjust the sauce. Its starch helps the sauce cling to the noodles. Add it a tablespoon at a time.
  • Measure the nutmeg lightly. A little adds warmth without taking over the flavour.

Easy Swaps and Variations

Fettuccine, linguine or penne can replace the tagliatelle. To make the dish less spicy, reduce or leave out the cayenne. For another variation, use shrimp instead of chicken and cook it just until pink and opaque. You can also stir a couple of handfuls of spinach into the sauce at the end.

Half-and-half can replace heavy cream, but the sauce will be thinner. Keep the heat low and add the Parmesan gradually.

How to Store and Reheat Leftovers

Store leftovers in an airtight container in the refrigerator for 2–3 days. Reheat gently in a skillet with a splash of milk or cream, stirring until warmed through. The sauce thickens as it cools, so add liquid a little at a time. Freezing isn’t recommended because cream sauces can separate after thawing.

Frequently Asked Questions

Can I use a different pasta shape?

Yes. Fettuccine is a classic option, but tagliatelle, linguine and penne also work. Reserve some pasta water before draining.

How can I keep the Alfredo sauce from becoming grainy?

Simmer the cream gently and lower the heat before adding the Parmesan. If the sauce gets too thick, stir in a little reserved pasta water.

Can I make this recipe without cayenne?

Yes. Leave it out for a milder chicken seasoning. The garlic, onion and smoked paprika will still add plenty of flavour.
